It’s unbelievable how much my appetite has changed. It seems like just yesterday I was complaining to my hubs that I was always hungry. And now I’m satisfied with the smallest of portions like the pizza in a mug we had a few days. It was literally maybe five bites! I am still fighting with the night time cravings but if I give in it’s been for a sugar free jello or Popsicle.
So tonight’s dinner was a fiasco, we we’re planning to have Alfredo Chicken and Zoodles. Well it turns out making the sauce the night before isn’t a great idea after all. When we went to heat the sauce up again it totally separated into a greasy looking mess. Seriously there was just no saving that, lesson learned!!
Our daughter surprised us with a Chocolate Cheesecake today. I made a mug cheesecake a few days ago and she didn’t like it. She says, her cheesecake is way better. So I said “prove it”. Today she comes in with a pan of what appears to be a frozen chocolate cheesecake. So we had some after dinner and it is indeed YUMMY but it wasn’t frozen at that point and honestly I don’t feel like it tasted or had the texture of cheesecake. Don’t get me wrong, it was really good. I actually ate TWO servings tonight. Personally I think it was more like a yummy smooth mousse, hubs agreed. But hey try it for yourself, the recipe is below.
