Today was blur, I spent my morning working and my evening playing. I was up again last night with leg cramps again, that’s getting really frustrating for not just me but my the husband as well. My having to get up and walk wakes him as well. My macro are a bit off today with fat being a little high and protein being a bit low. I made some peanut butter cookies this evening thinking it would increase my fat intake but didn’t consider that I skipped out on the beef cooked for dinner.
Keto Peanut Butter Cookies
Ingredients: 1 cup Peanut Butter, 1 pkg Cream Cheese, 1 egg, and 1/2 cup Stevia
Instructions: Preheat over at 350. Mix everything together. Drop 1 TBS at a time onto lightly sprayed cookie sheet. Use a fork to press the dough down. I like to crisscross my fork for that old fashioned peanut butter cookie look. Bake 14 minutes at 350. Makes 20 cookies, a little bigger or maybe about the size of a half-dollar coin. Macros will depend on the brands you use.
Food Log – Day Twenty Four
Breakfast was as usual scrambled eggs, sausage, and Bullet Proof Coffee.
Lunch came and went and I just didn’t even notice.
Dinner was interesting, the husband cooked ground beef with just chopped onion, salt, and pepper (the mushrooms had gone bad). Along with my favorite, french style green beans drained and 1-2 oz of pepperjack cheese. The thing is, I don’t much care to eat beef (he knows this) and I certainly am not eating it with what a spoon? Had it been mixed with something it would have been fine. But by itself I say … pass. Which is of course, why I was hungry again not long after and experimented on making a higher fat Peanut Butter Cookie.
MACROS: 3.8% carbs, 14.5% Protien, and 81.7% Fat
